Sargassum fusiforme, a brown seaweed traditionally used in East Asian cuisine and herbal medicine, is valued for its high iodine content supporting thyroid function, as well as fucoidan and alginic acid which contribute to anti-inflammatory and antioxidant effects. However, its use is limited by the presence of inorganic arsenic, requiring strict dosage control.
The high iodine content supports thyroid hormone synthesis by providing substrate for thyroperoxidase, while fucoidan exerts anti-inflammatory effects via inhibition of NF-κB and COX-2 pathways. Alginic acid binds to heavy metals and may reduce intestinal absorption of toxins. Fucosterol and other sterols contribute to antioxidant activity by scavenging free radicals and upregulating endogenous antioxidant enzymes such as SOD and GPx.
